First things you need to know before you cook a kare kare recipe is that Kare kare is a Filipino Recipe which contains a peanut-based sauce. Kare kare can be cooked with many kinds of meat. The most common ingredients that are used to cook a kare kare recipe are with beef and/or oxtail. There are other Kare kare recipes that contain meat like pork or with seafoods. One of the reasons might be the cooking time for beef. Beef or Oxtail takes about 2.5 hours to cook before it’s tender and properly cooked.

The Kare Kare Recipe makes use of annatto powder or atsuete seeds, just like the Filipino dish Palabok, for coloring and spicing up the dish. Aside from meat, this traditional Filipino recipe contains various kinds of vegetable ingredients like pechay, spring beans and eggplant.

How to cook a kare kare recipe.

In this recipe, I will describe how to cook a kare kare recipe with a sachet mix from mamasita because Atsuete seeds are, to my knowledge, not available in the country where I’m from. But I believe that the kare kare mix makes the taste exactly the way it’s supposed to be and the way I know it! In this recipe, I will use beef and oxtail for cooking kare kare. Please follow the exact procedure described for this recipe, and it will be delicious!

Once I found out where to buy the atsuete seeds in the Netherlands, I’ll explain how to cook a kare kare recipe with atsuete seeds as well. (Instead of the kare kare mix from mamasita) 🙂

Start by boiling the beef for about 2.5 hours in 2.5 liters of water with a beef bouillon cube until the beef is tender and set aside the meat and left-over stock.

While the beef is cooking prepare the ingredients for cooking a kare kare recipe by cutting and washing the ingredients.

Add 3 tbsp of cooking oil in a pan and fry the eggplant until it's golden brown and set aside.

Add, in the same pan as the eggplant, 3 tbsp of cooking oil, and add garlic until golden brown.

Next add the chopped onions and the left-over stock from the boiled beef.

Add the Kare kare mamasita mix to the Mixture of garlic, onions and broth and let it simmer for about 2 minutes.

Next add the beef to the kare kare Mamasita mix and mix well while adding Peanut Butter.

Follow by adding the stems of the Pakchoi and the beans to the kare kare mixture and let it boil for about 8 mins.

Lastly add the Pakchoi leaves to the mix and add some salt or pepper to taste.

When you think the kare kare mixture is too watery, you can add cornstarch to make it more consistent.

1 Piece Red Onion Chopped
3 cloves Garlic Minced
6 tbsp Cooking Oil
1 piece Eggplant
200 gr Pakchoi Cut stems and leaves apart
200 gr Green Beans
to taste Salt
to taste Black Pepper
70 gr Peanut Butter
