The Filipino Dishes website wouldn’t be complete if it doesn’t contain the famous Chicken adobo recipe! It is the most served, eaten and famous recipe in the Philippines. Adobo recipes comes in different styles because it can be prepared with either chicken or with pork. Chicken Adobo recipe can also be prepared in many ways and with different parts of chicken. In this recipe I will describe the easiest and traditional way of preparing a Filipino Chicken Adobo dish.

In this Chicken Adobo Recipe, I’ve used chicken breast as the main ingredient. I’ marinaded the chicken for this recipe for at least 20 hours. This way, the marinade is really absorbed into the chicken and makes the taste of the chicken abobo recipe even better! More information about marinading chicken can be found in this post

I will separate a portion of the Adobo ingredients for this recipe, so it will be clear what ingredients to use for the marinade and a what portion of ingredients are needed for cooking.

Add the chicken to the adobo chicken marinade and leave it overnight (in the ref). If you can't marinade the chicken adobo for 20 hours, then make sure that the chicken is marinade for at least 5 hours so the marinade can soak into the chicken.

Add the water, cracked peppercorn, brown sugar, Garlic and the ingredients that were left from the marinade (Soy Sauce and Vinegar, garlic and Laurel leaves) and bring it to a boil without stirring. You can put some extra soy sauce or salt accordingly to reach the desired taste.

Step 7

Lower the heat and add the chicken. You can cover the pan but it's not necessary. Leave the chicken adodo ingredients mixture simmer for about 20 minutes. You can stir the adobo ingredients occasionally, but I've learned that you can also just leave it as is.

Step 8
15 mins
Mark as Complete

Turn the chicken around and ket the Adobo chicken simmer for another 15 min (until chicken is tender).

Step 9

The sauce will be thick and reduced. If you want the chicken to be more tender, then simmer the whole mixture longer.
If you want the adobo sauce to be thicker you can also remove the Adobo Chicken and leave the left-over ingredients until it reaches the thickness you want.

Step 10

Serve this Adobo chicken recipe with white tice on a place. You can garnish the plate with spring onions, and I've added some fried onions as well which made the taste unique!
