Adobo recipes comes in different styles because it can be prepared with either chicken or with pork. Chicken Adobo recipe can also be prepared in many ways and with different parts of chicken. In this recipe I will describe the easiest and traditional way of preparing a Filipino Chicken Adobo dish.
In this Chicken Adobo Recipe, I’ve used chicken breast as the main ingredient. I’ marinaded the chicken for this recipe for at least 20 hours. This way, the marinade is really absorbed into the chicken and makes the taste of the chicken abobo recipe even better! More information about marinading chicken can be found in this post
I will separate a portion of the Adobo ingredients for this recipe, so it will be clear what ingredients to use for the marinade and a what portion of ingredients are needed for cooking.
Marinading the Chicken Adobo Recipe
Start marinading the chicken adobo bij mixing all the adobo chicken ingredients together: Soy sauce, Vinegar, laurel leaves and a tablespoon of garlic.
Start cooking Adobo Chicken by putting the cooking oil in a pan and add the chicken breast until the chicken is light brown. Approximately 1.5 min on each side and set aside.
Leave the left-over adobo marinade, including the oil, in the pan, and add garlic until its golden brown (not burned).
Turn the chicken around and ket the Adobo chicken simmer for another 15 min (until chicken is tender).
The sauce will be thick and reduced. If you want the chicken to be more tender, then simmer the whole mixture longer.
If you want the adobo sauce to be thicker you can also remove the Adobo Chicken and leave the left-over ingredients until it reaches the thickness you want.
